Carnitas: Fresh pork confit in lard

Fresh pork simmered in fresh lard. Finished with Mexican cocoa cola, salt, garlic and oranges.


Pig: Tabol Brewery

70lb pig roasted in a caja china for Tabols 2nd anniversary. Go to Tabol

Pigs Foot Terrine

Pigs feet boiled with vegetables, set in aspic with herbs. Served cold on warm bread with white wine.

Steak – Stokesfeast

80lbs of Ribeye: salt, pepper, butter bath. Feeds 60 people.

Bacardi & Coke Slurpees

Blended ice, Barcardi, Coke syrup, cherry garnish. Serve immediately.

Rotisserie Bologna Log

Whole bologna log covered with mustard and brown sugar. Rotisserie cook over hardwood coals. Serve with soft pretzel and pub cheese. Finish with beer and a shot.

Porchetta

Pork belly, stuffed with tenderloin and spices. Rotisserie cook over hardwood coals. Excellent on white bread with an over easy fried egg.

Scoobfest: a Paul-B-Que production

Ingredients: Case of champagne, ice, one awesome wife with friends. Serve immediately until finished.
